He must be an expert in Indian & Continental Cuisine. Be able to understand the mechanics of making a new menu and work out the food cost and overheads. Should have minimum of 4-6 years experience as a cdp. and around 2 years exp. as a Sous Chef. Should have a good experience in Curry and Tandoori section. Should be from a 5 Star Hotel Background. He must be fully conversant with each section of the kitchen & have complete knowledge of the duties involved. |
